Dine on fresh local fish that comes from the ocean to your plate and is prepared the favorite local way -- hand-dipped in golden beer batter and accompanied by a range of seasonal island dishes. Recipes passed down from Polynesian antecedents make the most of homegrown produce. The hallmark paddock-to-plate freshness extends even to a dessert of Norfolk Island fruit pies made from local eggs, fresh pastry and deliciously sweet in-season fruit.

Norfolk Island is a tiny fragile island eco-system. This guided walk through the Norfolk Island Botanic Gardens provides a fabulous opportunity to experience the diverse flora here. You will stroll through the cool glade of the rain forest and enjoy great views over valleys of tree ferns.

There are 25 rare and endemic bird species found in Norfolk Island's subtropical rain forest. The summer breeding season also brings a number of migratory seabirds. As you walk, your passionate local guide shares the secret life of some plants that are found nowhere else in the world.

The aircraft takes off from beautiful Rose Bay and follows the coastline along Sydney's northern beaches, flying directly from Sydney Harbour to the tranquil waters of the Hawkesbury River and Ku-Ring-Gai Chase National Park.

Bring your spirit of adventure to relish this unique opportunity to experience Sydney from above and below. You’ll begin your day with a short transfer by private vehicle to the world-famous Sydney Harbour Bridge, also known as the coat hanger, for a climb to its pinnacle. After the safety briefing you’ll be outfitted with a climbing suit. Your qualified guide will lead you up the eastern arch, to the summit and down the western arch of the bridge. Traveling in a small group, you are escorted all the way. On reaching the top of the bridge, pause to celebrate your moment of glory and take in the unrivaled panorama of the harbor and your ship 400 feet below. Back on solid ground and invigorated by your climb, you will receive a souvenir photograph. Rejoin your vehicle for a short transfer back to the ship or leave the tour at the Bridge Climb and make your own way back.

Sydney welcomes you this morning and tempts you with her outstanding charms as you orient yourself to the city's highlights. The Victorian era brought prosperity to Sydney, and endowed the city with scores of handsome buildings. Many of these remain today, nestling among dazzling, modern architecture.

Enjoy a captivating, guided sunset walking tour with an experienced zoo guide at Taronga -- one of the world's finest zoological gardens. Don't miss a journey through the zoo's wonderful Australian animal displays -- the Australian Walkabout Tour includes a visit to the kangaroos, koalas, wombats, echidnas and Australian birds. Also experience the themed Platypus Pools exhibit, which recreates the wonder of a Blue Mountains sandstone gorge where you can see many species of Australian animals and the recently-discovered dinosaur tree -- the Wollemi pine.

Travel westward to Mt Tamborine, taking in spectacular views along the way. At the top, set out on a refreshing, leisurely walk through sub-tropical rain forest to a waterfall. Here you will discover a wide variety of unique fauna and flora, including ferns, palms, elkhorns, staghorns, orchids and giant strangler figs.

A relaxing panoramic drive brings you to Queensland's largest and most-awarded winery -- Sirromet. You will sample approximately eight different wines here in the lovely setting of the estate's world-class cellar door. Take home with you a gift -- a bottle of Vineyard Selection wine.

The Gold Coast, approximately 48 miles from Brisbane, is home to some of Australia's most famous beach resorts. Your transfer today will take you to the most famous of them all -- Surfers Paradise.

In the Paopao Valley you'll pass some pineapple plantations; then, cross to the territorial property of Opunohu. A stop at one of the numerous marae (ancient, sacred sites) allows you to learn more about Polynesian culture. Continue to the Belvedere lookout point for a panoramic view (weather dependent) of Cook and Opunohu Bays.

Join marine biologist Dr Michael Poole or his assistant on this ecotourism and research project on wild, free-ranging dolphins. Dr Poole has been studying dolphins in French Polynesia since 1987. Spinner dolphins, rough-tooth dolphins and pilot whales are seen around Moorea, with spinner dolphins regularly coming inside the reef.

From the Belvedere Lookout Point, located up in the mountains between the two main bays of Moorea, you will take in the sweeping views of Cook and Opunohu Bays.

Your experience begins when you board a comfortable, covered, motorized boat. You will have the pleasure of admiring the island from the lagoon just as the first explorers did in the 18th century. The old crater of the volcano provides a view to unique and magnificent scenery-sharp peaks and high mountains, green valleys, pineapple plantations and lush forests. As you ride across the turquoise waters of Moorea, the captain will tell you all about the island's legends. You will then arrive at one of the gorgeous, white sandy islets surrounded by crystal clear water, shallow enough to walk right off the boat onto the beach. Swim or snorkel around the turquoise lagoon or simply relax on the beach or in the shade while the local crew prepares lunch. One of the highlights will be when the local guides attract schools of sting rays from the lagoon. You are welcome to join in and play with these gentle sea creatures. In exchange for a piece of fish they will gracefully dance around you. A delicious buffet-style lunch is served, with soft island music in the background. After lunch you will be entertained with more music and a coconut husking demonstration. Transfer by motorized catamaran back to the ship.

Set sail on the Ohana-a 65-foot maxi-catamaran and head down the west coast of Tahiti. The Ohana is the largest and fastest catamaran of its class in Tahitian waters, and offers plenty of shaded seating under the canopy. Sun seekers can relax on the two large nets located in the bow. Feel the sea spray on your face as the boat slices along the barrier reef. Watch for spinner dolphins, frequently seen in the area. On the south shore of Taapuna Passage keep an eye out for local and international surfers hanging ten and catching waves. Drop anchor in clear waters inside the lagoon, where you will have plenty of time to enjoy a swim and snorkel. Gear is provided. Access to the water is made by a large, easy stepladder. Towel off and settle in on the catamaran deck and nets. Kick back, unwind and enjoy a refreshment as you sail through turquoise waters on the way home.

The boat anchors near a gorgeous sandy islet surrounded by transparent turquoise waters. This is your chance to swim freely in the warm waters and enjoy this experience. Make the most of time allocated for snorkeling. You may even be lucky enough to glide with stingrays in the clear water.

Board a 4x4 vehicle for a great adventure deep into the unspoiled interior of Tahiti. You will head towards the east coast, passing by the island coastal road and through bustling Papeete.

Head to the west coast of Tahiti, enjoying views of the mountains and the island's shoreline. Shortly after departure, your captain will anchor in the lagoon. Be ready to jump in and discover the spectacular marine life of the Society Islands, including sandy and coral areas.

Hopping ashore, you'll set out on a gentle walk to reach the vanilla plantation that makes Taha'a so famous. The vanilla grown here is world-renowned and there is no doubt you will thoroughly enjoy this delightful sensory immersion into its flavor. You'll travel upstream on the only navigable river in the Society Islands -- the Faaroa River. Wild hibiscus trees (purau) grow along the sheer cliffs at the edge of the rain forest. Pass some villages en route -- a chance to observe the daily life of the inhabitants.
